Creme of Zuccini

Zuccini is one of my favourite veggies. Belonging to the squash family a wide variety of Indian recipes can be made with this vegetable.


Here is a healthy soup that's very easy to make.

Servings 4

Zuccini - 2 peeled and chopped
Potato -1 chopped
Onion -1 small chopped
Garlic pods - 3
Red chilli flakes - 1 tsp
Italian Seasoning - 1 tsp
Creme Fraiche - 2 tablespoon
Veggie Broth - 4 cups
Olive Oil - 1 tablespoon
Salt and pepper to taste

Heat a stock pot and add olive oil. Add red chilli flakes and garlic pods. Saute for a minute.
Now add onions and some salt. Saute till done.
Add zuccini and potato. Saute for a couple of minutes.
Add 4 cups Veggie Broth and boil till veggies are well done.
Cool and blend it.
Pour this back to the stock pot, add some milk for soup consistency if desired and heat it.
Switch off the flame and add creme fraiche.
Serve hot with a side of bread.
