Creamy Apple soup

This recipe has been adapted from Sumscuisine.blogspot.com

Don't you just love soups? I believe they simplify your dinner/lunch.
Soups are an essential part of my weekly dinner menus , I try to make a new one atleast once a week.

So here is a different kinda soup, one which you will love and would want to make for your family.

This serves 4-5
Carrots- 2 med sized.
Tomato - 1
Potato - 1 med sized
apples - 2 , the sweeter the better, or you can add one sweet and one tangy one.( I always do that)
Ginger root 1"
Milk 1/4 cup
Water- just enough to pressure cook
Creme Fraiche - 2 Table spoon ( don't skimp, it does give the added edge )
Dried italian seasoning 3/4 tsp

Peel and chop potato and carrot roughly.Chop apples and tomato.
Cook the above in a pressure cooker with just enough water for 1 whistle.
Let it cool and blend it with ginger. You can add the water used for pressure cooking to give a good consistency.
Strain it into a vessel, Add salt and pepper and let it boil.Add the seasoning and milk if required.
Boil it for a couple of more minutes. Switch off the heat and add creme fraiche and stir well.

Enjoy the creamy soup with a good side of bread.
