My mother in law hates cooking, but when she actually does cook ,the simplest ingredients seem to have magic in them. This is one such recipe.
When I was newly married I was new to cooking too, this was one of the first recipes I learnt from her.
Cooked Corn shells - 2 cups
2 medium size onions finely chopped
Coriander leaves - 1/2 bunch
Turmeric Powder-1/2 tsp
Green chillies - 3 or 4 finely chopped
Saunf 1 tsp
Oil- 2 tsp
Salt-to taste
Method:
Ground coriander leaves, green chillies into a fine paste without adding any water. Now add corn and pulse the mixer once or twice. You would get a semi solid mixture which is perfect.
Heat a kadai, Add the saunf and now fry the onions till they are transluscent
Add salt and turmeric powder.Saute for a min.Now add the corn mix and saute till you get a nice dry mixture.
Make parathas with this stuffing and enjoy them with a simple raitha or pickle.
