Corn and coriander parathas




My mother in law hates cooking, but when she actually does cook ,the simplest ingredients seem to have magic in them. This is one such recipe.
When I was newly married I was new to cooking too, this was one of the first recipes I learnt from her.

Cooked Corn shells - 2 cups
2 medium size onions finely chopped
Coriander leaves - 1/2  bunch
Turmeric Powder-1/2 tsp
Green chillies - 3 or 4 finely chopped
Saunf 1 tsp
Oil- 2 tsp
Salt-to taste

Method:

Ground coriander leaves,green chillies into a fine paste without adding any water. Now add corn and pulse the mixer once or twice. You would get a semi solid mixture which is perfect.
Heat a kadai, Add the saunf and now fry the onions till they are transluscent
Add salt and turmeric powder.Saute for a min.Now add the corn mix and saute till you get a nice dry mixture.

Make parathas with this stuffing and enjoy them with a simple raitha or pickle.
