Colored Pepper and Paneer Fried Rice





This recipe is a quickie. Can be made with left over rice too.

Serves 4

Colored Bell Pepper 2 cups chopped
Paneer 1 cup squares
Basmati Rice 1.5 cups
Onion 1/2 small thinly sliced
Spring Onions - 1 cup
Garlic Cloves chopped 1 tablespoon
Red Chilli Flakes 1 tsp
Green Chillies 2 slit
Crushed Black Pepper 2 tsp
Salt to taste
Oil 2 tablespoon

Cook Basmati Rice and set aside.I usually add saffron to get the yellow color.That is optional however.Add salt while cooking rice.

Take a wok and add 2 tablespoon and fry the paneer till golden brown and set aside.
In the same pan add chopped garlic and fry for a minute.Add onions and some salt.
Add bell pepper , red chilli flakes and crushed black pepper.
Stir fry for a couple of minutes and add paneer.
Now add the rice and toss.

Garnish with spring onions and serve hot.
