Pani Puri

Most of us love Pani Puri, I am yet to meet a person who doesn't.Ever since I migrated here, the one thing I truly miss from India is having gol gappas or pani puri.
You get pani puri here but the taste is just not the same.So I prefer making it at home.

So here is my recipe to make the delicious pani for our pani puri.

Ingredients
Serves a 2 qt bottle.
Tamarind Paste 1 tablespoon
Coriander leaves 1 handful
Mint leaves - 1 handful
green chillies - 2
lemon juice from 1 big lemon
Pani Puri Masala - 4 tablespoon
Amchur Powder - optional
Water to make the pani.

Make a paste of coriander leaves, mint and green chillies.
Mix the tamrind pulp in water and add the paste to this.
Add pani puri masala and lemon juice.
Let this rest for atleast 4 hrs.

You can vary the qty of tamarind and lemon juice depending on your taste buds.

I generally make the following fillings for the puris
Aloo Mixture - aloo mashed , add salt ,garam masala ,finely chopped coriander and green chillies.
Chana - cooked, you can use black chana. Mix in salt and garam masala while cooking.
Finely chopped Onions
Sev
Chat Masala

This stuffing in the puris and pani is surely heaven!
