Bhindi Masala



This is one of my favourite lunch box recipes, be it with rice or rotis. The best part is you don't get the sliminess from Bhindi in this.

Bhindi 1/2 a pound
Onions- 2 small finely chopped
Tomato- 4 finely chopped
Ginger Garlic Paste 1 tablespoon ,alternatively you can add grated ginger and garlic too.
Cumin seeds 1 tsp
saunf 1 tsp
green chillies 3 finely chopped
curry leaves few
coriander leaves - 1/2 bunch finely chopped
turmeric powder 1/2 tsp
garam masala 1/2 tsp or substitute with whole spices.
amchur powder 1/2 tsp
salt to taste
oil 3 tablespoon
fresh cream optional


Wash the bhindi and wipe it with a clean towel. There should not be any moisture since it causes okra to be slimy.Trim the ends and cut into 1" peices.

Heat a kadai , add 3 tablespoon of oil and fry the okra in a medium flame until it becomes brown on both sides. Remove and keep it aside.

The kadai will have enough oil to completely cook the dish, if needed you can add some more.
Add cumin and saunf.Add ginger garlic paste.
Now add onions, green chillies , curry leaves and coriander leaves.Add turmeric powder.Saute well till onions are done.
Now add tomatoes,salt,garam masala and amchur powder. Mix well.
Cover and cook over medium flame for about 6-8 minutes.You can add water if needed.
Now add the fried bhindi to this,mix well, cover and cook for 5 minutes.
Take off the stove and garnish with coriander leaves.You can add fresh cream to make it richer.

Enjoy hot with rice or roti.
