Tomato Kurma



Another lunch box recipe.Tastes great with both rotis and idli/dosa.

Onions 1 small finely chopped
Tomatoes- 4 pulsed in a blender.
Whole Spices - Cinnamon (1" stick ), cardamom (2) , cloves (2) , bay leaf (1)
Salt to taste
Oil - 2 tablespoon
Cumin 1 tsp
Curry Leaves few

To Grind

Coconut - 3 tablespoon
Saunf- 1 tsp
Dhaniya 1 tablespoon
Green Chillies - 2
Chana Dalia or Roasted Gram - 1 tablespoon
Coriander leaves - few
Khus Khus 1 tsp
Cashew 4 - optional

Heat a kadai and add oil. Add whole spices and saute for a minute. Now add cumin and curry leaves. Add onion and fry till translucent.
Add the tomato puree and salt.
Cover and cook till oil oozes out.
Add the ground paste and some water.
Cover and cook for 10 minutes on a low flame.

Switch off and garnish with coriander leaves.
Enjoy!
