Palak Rice



What do u do when you have spinach and are bored with the same old recipes?
All I know to make with Spinach is either add it in a salad or make Palak paneer or
may be a dal.That's it . I've never tried something else.

Today I had to use the spinach in my refrigerator and an idea to make it like a pulao struck but with its puree instead.( I was lazy to chop it).The result a mild and flavorful Spinach Pulao.
It was awesome!

Here's the recipe

Spinach Puree - 1 cup (blanch the spinach and blend it)
Basmati Rice 1.5 cup
water - 2 cups
Carrot 1 peeled and sliced as halves
Whole Spices - Cardamom (3) Cloves(4) Bay leaves small(4) Cinnamon sticks 2
Ghee 1 Tablespoon
Onions- 1 small cut into thin slices
Tomato- 1 chopped finely
Green Chillies -3 slit
Garlic- 4 cloves chopped into slices
Turmeric Powder - 1/2 tsp
Biriyani Masala - 1/2 tsp
Salt as needed

Heat a deep bottom pan. Add oil, when the oil is hot add whole spices, fry for a
minute, now add garlic and fry for just a couple of seconds. Do not let the garlic
brown , it will give a bitter taste.
Add onions, green chillies, salt and turmeric powder.
Once onions are done add tomatoes and cook for a minute.
Now add spinach puree and cook for 2 minutes.
Add the rice and mix with the puree. I usually add ghee at this stage, it gives a
very good taste and flavor.
Now add water and let it boil.Once the water is boil reduce the heat to complete low
and cover the pan.



The rice will cook in about 15 to 20 minutes.

Enjoy this with a simple raitha
