Methi Malai Mutter



One of my favourite dishes. I learnt this recipe a couple of years back from a tv channel.We get methi in the states all year long, so I try to include it in my dishes as much as possible.

Fenugreek seeds or the leaves have numerous health benefits.Something as simple as soaking fenugreek seeds at night in water and drinking it first thing in the morning helps keep many medical problems at bay especially for the women folk.

Methi leaves - 1 small bunch , washed and only leaves picked and chopped.
Onion - 1 large - chopped into big chunks.
Green Chillies 3
Cloves 2
Cinnamon 1" stick
Green Peas 1/2 cup
Cashew 1/3 cup
Fresh Cream - optional
Milk 1/2 cup
Cumin 1/2 tsp
Ginger 1" chopped
Garlic 2 cloves chopped
Salt to taste

Heat a pan and add oil. Now add cumin,cloves, cinnamon, ginger and garlic. Fry for a couple of seconds, do not let it brown.Add cashew and green chillies.Fry for a couple of minutes.
Now add onions and salt.Once onions are done cool this and blend it to a smooth paste. Add milk if needed for blending.

In the same pan add methi leaves and fry till done.
Now add peas,I used frozen peas. Add salt, cover and cook till done.
Now add the blended paste and some water.
Cover and cook on a medium flame for about 15 minutes.
Add milk if necessary.

Switch off the stove. You can add fresh cream at this stage.I did not, I like it as it is.Enjoy with roti or naan or rice.

Tip
If you do not have fresh methi leaves, you can add dried kasuri methi leaves too.
